Overnight Chia-Goji Breakfast Pudding


Our mornings are a little hectic with two young kids who can be totally unpredictable! So I try to do as much prep the night before to make our mornings a little less frenetic. One of my old favourites is overnight chia pudding! Makes it super easy to have a balanced, filling and wholesome breakfast ready in a jiffy in the morning.


Here's what you'll need: To a mason jar, add 👉 3 tbsp hemp hearts 👉 2 tbsp chia seeds 👉 2 tbsp goji berries 👉 1/2 tsp cinnamon

I added about 3/4 cup homemade almond milk, a few drops of stevia and about 1/2 tsp vanilla. Mix it up and into the fridge! In the morning, it’ll be a lovely chia pudding breakfast. Depending on consistency, I may add a touch more almond milk, and you bet your butt I’ll be throwing in a bunch of blueberries. Also will top off with pumpkin seeds 😊 This morning I even added a tbsp of collagen! You can also experiment with other flavour combinations, including a chai spiced chia pudding with cardamom, cinnamon, vanilla and a touch of nutmeg. Cacao powder, nut butter and cacao nibs make breakfast seem like dessert :) Let your taste buds guide your way! Enjoy :)
